
Dairy products surge higher, cheese up modestly
Butter surged to the highest levels since the beginning of 2025 on the CME spot market trade in the face of a whopping 58 loads changing hands over 4 days this holiday-shortened week. On Wed., May 28, the butter price was $2.5250/lb, up 18 cents/lb from the prior Wednesday. Adding to the Class IV milk price rally was the 6-cent gain in the spot price for Grade A nonfat dry milk, pegged at $1.2850/lb with 17 loads trading.
On the Class III side, dry whey jumped 4 cents at 57 cents/lb with 7 loads changing hands. The 40-lb block cheddar price gained a modest 1 1/2 cents at $1.95/lb with 29 loads trading over 4 days. The 500-lb barrel cheese price was about steady with the prior Wednesday at $1.8650/lb with 7 loads traded. The barrel price will be discontinued in FMMO pricing formulas effective June 1st.
